Cut the beetroot into wedges too.<\/li>\n<li>Cut the cucumber into 5 pieces. Squeeze the juice from the lemon.<\/li>\n<li>Peel the ginger and cut into small pieces. Pluck the leaves from the sprigs of mint and set 4 nice leaves aside.<\/li>\n<li>Puree the apple pieces with the cucumber, beetroot, ginger, mint, lemon and apple juice in a blender.<\/li>\n<li>Divide the smoothie across 4 large glasses and serve with the leaves of mint you set aside.<\/li>\n<\/ol>\n<p>Tip: Add a little water for a somewhat thinner
