Snij de aubergine en de kaas eveneens in schijven en<br \/>\nmarineer alles samen in een schotel met de olijfolie en het<br \/>\ncitroensap. Kruid vervolgens met peper en zout.<br \/>\nVerwarm ondertussen de grilpan of de grill voor. Grill de<br \/>\naubergine, appel en kaas aan beide zijden, tot ze donkere<br \/>\nstrepen vertonen. Leg vervolgens de gegrilde ingredi\u00ebnten<br \/>\nterug in de schotel, voeg een deel van de munt toe en breng<br \/>\nindien nodig het geheel op smaak met peper en zout.<br \/>\nLeg de verschillende schijven op elkaar en garneer met peper<br \/>\nen de resterende munt.<\/p>\n<p>Tip:<br \/>\nDit gerecht kan als snack of als bijgerecht gegeten worden<br \/>\nbij gegrild vlees of vis,
